Ingredients

  • 3 tbsp olive oil
  • 1 medium onion chopped
  • 1 tsp salt
  • 1 tsp cumin powder
  • 1 tsp curry powder
  • 3 cloves garlic chopped
  • 1 medium sweet potato cut cubes
  • 1 cube vegetable stock
  • 1 cup red cracked lentils
  • 3 cups water

Instructions

  • In a saucepan, heat the olive oil over medium heat.
  • Add chopped onion and sauté until translucent. Sprinkle salt over the onions and stir.
  • Add cumin powder, curry powder, and chopped garlic. Stir well to combine.
  • Add the cubed sweet potato and cook for a few minutes until slightly softened.
  • Crumble the vegetable stock cube into the saucepan and stir.
  • Add the red cracked lentils and water to the saucepan. Stir to combine all ingredients.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes or until the lentils and sweet potatoes are very well cooked, stirring occasionally.
  • Use a hand blender to blend the soup to a smoother consistency, if desired.
  • Serve the red lentil soup hot, either on its own or accompanied by toasted bread.
