Ingredients

  • 1 cup red or black beans
  • 1/2 cup cracked coarse wheat (bulgur)
  • 2 medium onions
  • 1/2 cup olive oil
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon salt

Method
 

INSTRUCTIONS
  1. Prepare the Beans: Begin by soaking the beans in water overnight. Then, strain them.
  2. Cook the Beans: Place the soaked beans in a cooker with approximately 5 to 6 cups of water. Cook until the beans are well cooked.
  3. Prepare the Onions: In a separate pan, fry the chopped onions with salt until they turn a golden brown colour (avoid burning them).
  4. Combine Ingredients: Add the cooked onions to the beans and bring to a boil. Allow them to boil for 15 minutes to tenderize the onions.
  5. Add Bulgur: Next, add the cracked coarse wheat (bulgur) to the mixture. If necessary, you can add 1 cup of boiled water to adjust the consistency.
  6. Simmer and Stir: Reduce the heat to low and simmer the mixture, stirring constantly until the bulgur is well-cooked. The texture should be fluid, and the colour should be dark brown.
