Makhlouta / مخلوطة

Ingredients
  

  • 1 cup of boiled red or black beans
  • 1 cup of green lentils
  • 1 cup of boiled chickpeas
  • 1/2 cup of cracked coarse wheat (burghul/bulgur)
  • 1/2 cup of Egyptian rice
  • 2 medium onions
  • 1/2 cup olive oil
  • 1 tsp black pepper
  • 2 tsp salt
  • 1 tsp cumin
  • 1 tsp caraway

Method
 

Instructions
  1. In a pan, fry the chopped onions with olive oil and salt until they turn brown (but not burned). Then add them to the beans, chickpeas and green lentils. Boil for 15 minutes to tenderize the onions.
  2. Add the cracked wheat (burghul) and 1 cup of boiled water if necessary.
  3. Cook over low heat, stirring constantly until the cracked wheat is well cooked.
  4. The texture should be fluid, and the colour dark brown.
